
(Parmesan ice-cream - Authentic Italian recipes)
- 300 g (10 1/2 oz) grated Parmesan cheese
- 500 ml (16 fl oz - 2 cups) single cream
- Freshly ground black pepper
- Salt

In a saucepan put cheese, salt and pepper. Add cream, stirring with a wooden spoon. Cook the mixture in bain-marie, whipping with
a whisk continuously, until well fluffy.
Remove from the heat and pass the mixture through a sieve.
Put in the ice-cream freezer and follow the instructions to do an ice-cream.
Note
- - You can serve, cut into slices, as a starter with ham and hard-boiled eggs.
- - It may be a cheese course at the end of a lunch; in this case you needn't prepare a cake. The lunch may finish with fresh fruits. Don't choose this dish for a dinner.
- - This is a recipe full of calories and fat. Don't eat it too much and too often!
