meat (barbecue, venison and game, cacciatora stew, roast meat), agnolotti from Asti, risotto with barolo, seasoned cheese.
- Production area of Barolo DOCG:
- eleven municipalities in the Langhe hills, southwest of the town of Alba.
- Vine selection :
- Nebbiolo (Michet, Lampia, Rosé 100%)
- Colour:
- ruby red with maroon-orangey highlights
- Aroma:
- strongly scented of rose, violet and liquorice
- Taste:
- dry, full bodied, austere, tannic and quite sapid
- Minimum alcohol content:
- 13%
- Aging:
- minimum three years, two of which in wood, up to ten years or more
- Types:
- Barolo Chinato, opportunely aromatized
- Riserva:
- the Riserva denomination needs at least five years of aging
- Serving temperature of wine Barolo:
- Serve the wine at: 67° Farenheit (20° Celsius) opening the bottle at least two hours before serving
