- 60 g (2 1/4oz) fresh young onions, finely chopped

- 1 teaspoon dried marjoram

Put onions, olive oil, aromatic herbs and beans in a non-stick frying pan. Let all the ingredients flavour for 5-10 minutes,
stirring now and then.
Meanwhile put egg yolks in a large bowl and slice hot-dog inside; stir. Whip egg whites very well with a pinch of salt.
Preheat oven to 180°C (350°F). Mix egg yolks with beans sauce and beaten egg whites; stir with delicacy and control salt.
Pour all the mixture into an oiled ovenproof dish and bake for about 20 minutes or until surface is golden.
Note
You can accompany this dish with a seasonal salad or a tomato salad and some fresh fruit for an authentic Italian meal.
