  • Pizza dough for 4 people
  • for the topping
  • 6 courgettes (zucchini, about 900 g - 2 lb)
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, finely chopped
  • 2 teaspoons dried marjoram
  • 2 tablespoons dried chives
  • 2 fresh young onions, finely sliced (about 80 g - 3oz)
  • 2 glasses of water
  • 1 glass of white wine
  • 250 g (8 1/2 oz) mozzarella cheese
  • 100 g (3 1/2 oz) smoked trout fillets
  • Salt

Prepare the courgettes (zucchini). Clean and wash them accurately; remove the central part and cut into thin strips. Put them in a non-stick frying pan together with 2 tablespoons olive oil, parsley, marjoram, chives, onions, water and wine. Season to taste with salt and cook over a medium heat until the cooking juice is well retired.
Divide the dough into four pieces and, on a lightly floured surface, roll out each piece. You can obtain the shape you want: rectangular or round. This amount of dough is enough for four 30 cm (12in) round baking sheets if you like crunchy pizza but if you prefer soft pizza use only two baking sheets.
Oil the baking sheets with the remaining olive oil. Transfer every portion of dough to a baking sheet.
Cut the smoked trout into thin strips. Spoon the courgette sauce on the top and then arrange the trout; let the two pizzas rest for about 20-30 minutes.
Preheat oven to 220°C (425°F) and cube the mozzarella. Bake the two pizzas for about 10-15 minutes, then remove the baking sheets from the oven and arrange the cubed mozzarella cheese on the top. Bake again for about 5 minutes. Cooking times are indicative; everyone can adjust them to his oven.
Serve hot or warm.
