baked cherry tomatoes

Tasty nibbles for your starter course. The cherry tomatoes are filled with mozzarella and anchovies
ingredients - serves 2
  • 20 cherry tomatoes
  • 20 cherry mozzarella
  • A bunch of chives, chopped
  • Anchovy fillets in oil
  • Extra virgin olive oil
  • Salt

Preheat oven to 190°C (375°F).
Wash the cherry tomatoes and scoop out the pulp. Season to taste with salt, put some chives, a drop of oil and a cherry mozzarela inside.
Arrange a piece of anchovy or a fillet over and bake for 8-10 minutes or until mozzarella melts.
Serve lukewarm or cold.
