(A menu based on fish for Xstmas Eve)

In Italy many people use to prepare a fish menu for Christmas Eve's supper. Fish must be well cooked and of good quality. It's a real Italian tradition in many regions from Piedmont to Sicily. We suggest you two menus: the first is very easy and ideal for everyone who can't cook fish very well; the second is more difficult and it's ideal for people who have time and a lot of patience.
We have used well-known fish and combined the different courses thinking that all the family, young and old people, are around the table at Christmas Eve.
We don't find, as you can see, a lot of courses in every menu. In fact we had the habit to serve a lot of different dishes in Italy many years ago; nowadays we prefer to choose few courses but of good quality!

Easy menu

• - Prosecco with different appetizers (olives, cubed Parmesan, peanuts, little pizzas ...)
• - Courgette,tuna and ricotta cheese pie
• - Smoked tuna, swordfish and salmon (sliced and sprinkled with orange juice)
• - Cornmeal slices with king prawns
• - Noodles with salmon - or - Tagliatelle with smoked sturgeon
• - Citrus fruits-flavoured grouper fillets
• - Green salad with peanuts, apples and sultanas
• - Fresh fruit salad served with lemon ice-cream
• - Panettone and dried fruit
• - Suggested wine: a good prosecco (Italian wine).

More difficult menu

• - Prosecco with different appetizers (olives, cubed Parmesan, peanuts, little pizzas ...)
• - Salmon salad
• - Pasta with king prawns and baked ham
• - Fish lasagna - or - Rice timbale with stone bass balls
• - Trouts, Piedmont-style
• - Green salad with apples and walnuts
• - Orange jelly
• - Suggested wine: a good prosecco (Italian wine)
