4 season pizza
(4 season pizza - Our recipe)

  • 30 g (1 oz) champignons in oil (mushrooms)
  • 6 artichokes in oil
  • 50 g (2 oz) boiled ham, cubed
  • 125 g (4 1/2 oz) mozzarella cheese
  • 20 clams
  • 12 mussels
  • 30 frozen little shrimps
  • 8 very little octopus
  • 2 tablespoons dried chives
  • 3 tablespoons extra virgin olive oil

The ingredients for 4 season pizza are avery different in every region in Italy. We are going to describe you our version. You have to know that the most important thing is the pizza has to be divided into four portions; everyone represents one season. So we use mushrooms for autumn, ham for winter because in Italy we kill the pig in this season, the artichokes for spring and fish for summer.

Prepare the dough. Choose the dough you prefer but remember that our version has less fat and calories. When the dough has risen, divide it into four pieces (put apart a little portion, you’ll use it for dividing every pizza into four portions) and,  on a lightly floured surface, roll out each piece. You can obtain a round shape.The doses are enough for four 30 cm (12in) round baking sheets if you like crunchy pizza but if you prefer soft pizza use only two baking sheets.
Oil the baking sheets with 1 tablespoon olive oil. Transfer every portion of dough to a baking sheet. Divide every surface into four portions using the dough you’ve put apart. Look at the photo for more details.
While the dough is rising prepare the fish; boil the octopus, thaw the shrimps, open the mussels and clams and remove the molluscs.
Prepare the tomato sauce mixing  the puréed tomatoes with the remaining olive oil, chives and season to taste with salt.  Spread the tomato sauce to within 1/2   inch (1,2 cm) of  the rim. Allow to rise about 20 minutes in a warm place.
Meanwhile preheat oven to 220°C (425°F) and prepare all the other ingredients. Cut the artichokes into thin slices, half the mushrooms and grate the mozzarella cheese.
Arrange the mushrooms on the first portion, artichokes in the third and fish except shrimps in the fourth. Bake for about 15 minutes. Remove ypur pizza from the oven and sprinkle the mozzarella over the artichokes and mushroom. Bake for other 5 minutes or until the cheese melts. At the last minute remove your pizza from the oven, add the ham on the second portion and shrimps on the fourth. Bake for only 2 minutes.
Serve hot or warm.
