250 g (8 1/2 oz) mozzarella,cubed |

Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)
Wash cherry tomatoes under running water, pat dry with absorbent kitchen paper and halve them. Put them in a bowl together with cubed
mozzarella, dried chives, olive oil and, if you like it, 2 teaspoons hot chilli pepper-flavored olive oil. Season to taste with salt and stir.
The dish is ready.
Note
It's a good one-plate meal; you can accompany it with a seasonal salad or boiled vegetables such as spinach. Obviously you have to serve it with
some good bread. But it is excellent in a buffet too or as an appetizer; in these cases it serves more people.
What's the right wine?
Our suggestion is: Franciacorta (white wine from Lombardy)
