Salad with French beans and prawns
(French bean & prawn salad - Traditional recipe)

Time: preparation: 15 minutes plus thawing
........ and marinating time
........ cooking: 15 minutes

serves 2

300 g (10 1/2 oz) frozen and precooked
    prawn tail
350 g (12 oz) frozen French beans
1 lemon
4 tablespoons dried chives
2 tablespoons dried parsley
1 teaspoon dried bay leaves, chopped
2 teaspoons dried marjoram
4 tablespoons extra virgin olive oil

Authentic Italian recipe -

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

It's a recipe from Mediterranean area; we modified it. It's very simple and tasty.
Thaw prawns at room temperature. It needs 3-4 hours. Then drain them very well and pat dry with absorbent kitchen paper. Squeeze your lemon and let prawns marinate in its juice for about 30 minutes. Remember to turn them now and then with a spoon.
Meanwhile steam French beans, cut them into pieces and put in a bowl. Add prawns, drained from lemon juice, aromatic herbs and olive oil. Season to taste with salt, stir and serve.

Note

  • - In winter you can add hot French beans and so you can serve this dish warm. In summer you can serve it cold; besides you can use fresh aromatic herbs, young French beans and fresh prawns. If you buy raw, fresh prawns, you have to increase the quantity (600 g - 1 1/3 lb), boil them for 1-3 minutes until their shells turn pink and then remove their shells and heads.
  • - If you like, you can add a garlic clove in the marinating juice. We prefer not to use it in order to taste the real flavour of the ingredients.

Our suggestion is: Regaleali Bianco (white wine from Sicily)
