noodles with sturgeon
(Tagliatelle with smoked sturgeon - Our recipe )

Time: preparation: 5 minutes

serves 2

300 g (10 1/2 oz) chopped and seeded fresh tomatoes
Bunch of fresh chives, chopped
2 tablespoons chopped fresh parsley
Half a glass of white wine
4 tablespoons extra virgin olive oil
55 g (2 oz) smoked sturgeon
125 g (4 1/2 oz) dried tagliatelle (noodles)
Salt

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

This is a fast and easy recipe but it's tasty and refined too.
While you are cooking your Italian tagliatelle, you have to prepare the sauce for dressing them. Put oil, aromatic herbs, tomatoes and wine in a saucepan. Cook over a medium heat until wine is evaporated; in the last minute add sturgeon, cut into thin strips, and switch off the gas. Season to taste with salt only if necessary.
Drain pasta very well and dress with the sauce. The dish is ready. Serve immediately.

What's the right wine?
Our suggestion is: Corvo Bianco Duca di Salaparuta (white Italian wine)
