
(Apple fritters - Our recipe)
- 400 g (14 oz) white flour
- 2 eggs
- 15 g (1/2 oz) active dry yeast
- 2 tablespoons ground cinnamon
- Grated rind of a lemon
- 5 (1.2 kg - 2 2/3 lb) apples
- 5 (90 g - 3 1/5 oz) tablespoons sugar
- Extra virgin olive oil for frying
- Icing sugar

Prepare a batter with flour, eggs, ground cinnamon, sugar, lemon zest, about 500 ml (16 fl oz - 2 C) of water and yeast.
Use a whisk to avoid lumps. Allow it to rest for about 1 hour.
Then peel and slice the apples. Add them to the mixture and stir.
Heat a good quantity of oil in a frying pan and deep fry spoonfuls of the mixture over a high flame until light golden brown.
Remove the fritters with a slotted spoon, put them on kitchen paper to remove the excess of fat and dust with icing sugar.
Serve warm or cold.

- - It's very difficult to have the real amount of the frying oil and icing sugar.
