How to make it
Peel and cut into pieces a white peach; mix it in the electric mixing glass together with 2 tablespoons crushed ice and a little Champagne. Pour into the chilled glass and then add the remaining Champagne. The cocktail is ready.
Variations and note
You can also use an Italian Prosecco or a sparkling wine instead of champagne. It's a pre dinner cocktail. This cocktail was created by Giuseppe Cipriani at Harry's Bar in Venice in 1948. In this time there was an exhibition of a painter, Giovan Battista Bellini, named Giambellino. The cocktail name derives from this.
